When I decided to start the carnivore diet in January of 2019, the holidays had already passed. I stayed Keto during the 2018 holidays but there are tons of recipes to make that VERY easy.

But as the holiday season approached this year I wondered how I would stick to my carnivore diet and enjoy some Thanksgiving recipes.

I have always loved stuffing or dressing. I was famous for my cornbread stuffing for years, before going Keto. I really wanted to make a delicious, all carnivore stuffing for this Thanksgiving but wondered if it could be done.

Well my carnivore friends, the answer is a resounding YES. And I am so excited to share my easy Carnivore Stuffing Recipe with you. ZERO CARBS!

Carnivore Stuffing Recipe

I am pleased to tell you that this got a thumbs up from my husband and teenage daughter. I will definitely be taking this with me to our Thanksgiving gathering… I bet even the non-carnivore / keto folks will like it. I think they’d be hard pressed to even figure out the ingredients on their own.

But you don’t have to try to Sherlock Holmes this. I’m giving the carnivore stuffing recipe to you right now!

Carnivore Stuffing Recipe Ingredients

• Cast Iron Skillet or Baking Dish
• 4 cups (about 8.5 ozs) of Crushed Pork Rinds
  I used the Utz Brand from Costco and ground them in my mini food processor.
• 1 pound of ground pork, cooked and drained
  For more flavor use a pork sausage – I used unseasoned.
• 1 pound of ground beef, cooked and drained
  I used 85%
• 4 oz (or one stick) of Melted Butter
  I used Kerrygold
• 2 Large Eggs, slightly beaten
  Preferably pastured but you use what you have
• 1 cup of broth
  I used chicken but you can use beef, turkey, pork or whatever you have.
• Salt, Pepper or other Seasonings to your tast
  I used Real Salt, Pepper and Poultry Seasoning in mine.

Just a note: Trust me, drain your meats because the
carnivore stuffing will be TOO GREASY if you don’t.

Carnivore Stuffing Recipe Directions

1. Pre-heat your oven to 400° f
2. If your pork rinds aren’t crushed already, do that now. Measure the 4 cups AFTER you crush, not before. You can buy these ready made by Porking King Good
3. To your crushed pork rinds add your drained ground pork (or sausage) and drained ground beef. Mix.
4. Now add your 2 slightly beaten eggs. Mix again.
5. Mix in your melted.
6. Mix in your broth (if you want a dryer stuffing you can use less broth).
7. Once all the ingredients are fully incorporated spread the mixture into your baking dish or cast iron skillet. Use a spoon to make sure everything is evenly distributed.
8. Bake at 400° f for about 30 minutes.
9. Raise the oven temp to broil and brown the carnivore stuffing another 2 – 3 minutes until the top is a deep golden brown.
